Chicken Alfredo Pasta

Ingredients
- 1 lb fettuccine pasta
- 2 large chicken breasts, sliced into strips
- 2 tbsp olive oil
- 1/2 cup unsalted butter
- 1 1/2 cups heavy whipping cream
- 2 cloves garlic, minced
- 1 1/2 cups freshly grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Season chicken strips with salt and pepper, then cook thoroughly until golden brown and cooked through (about 5-7 minutes). Remove chicken from skillet and set aside.
- Lower skillet heat to medium. Melt the butter, then add minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and let simmer gently for about 5 minutes, stirring frequently.
- Reduce heat to low and gradually stir in the grated Parmesan cheese until completely melted and smooth. Season the sauce with a pinch of salt and pepper.
- Toss the cooked pasta and chicken into the Alfredo sauce until completely coated. Garnish with chopped parsley and serve hot!
