Shrimp Scampi

Ingredients
- 12 oz linguine
- 1 lb large shrimp, peeled and deveined
- 4 tbsp butter, divided
- 3 tbsp olive oil
- 5 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 tsp red pepper flakes
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Cook the linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- While the pasta cooks, heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
- Season the shrimp with salt and pepper, then add to the skillet. Cook for 1-2 minutes per side until pink and just cooked through. Remove and set aside.
- Add garlic and red pepper flakes to the same skillet, cooking for 30 seconds until fragrant.
- Pour in the white wine and simmer for 2-3 minutes, letting it reduce slightly.
- Stir in the remaining butter and lemon juice until the sauce is glossy.
- Return the shrimp to the pan along with the drained linguine, tossing to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
- Stir in fresh parsley and serve immediately.
